Ideally, chocolate should be wrapped tightly and kept in a cool, dry and dark place (between 60 and 75 degrees Fahrenheit). If it is stored in temperatures above 75 degrees Fahrenheit, a whitish layer may form on the surface of the chocolate, known as the bloom. A chocolate bloom is an accumulation of cacao butter separating from the other ingredients. When chocolate blooms, due to exposure to a wide range of temperatures or temperatures above 75 degrees Fahrenheit, it is still fine to eat. As chocolate has a tendency to absorb other flavors it is best to store it away from other strong foods. Refrigerating or freezing your chocolate is a fun treat; just remember to wrap it up tightly so it is not exposed to other strong flavors. Chocolate does age well over time, much like wine.
