Makes 20 cookies
Ingredients:
- 1 14 oz bag coconut flakes
- 8 oz sweetened condensed milk
- 1 tsp vanilla
- 2 egg whites
- 1 bag nib mor Organic Dark Chocolate snacking chocolate, chopped
Directions:
- Preheat oven at 350°F degrees
- In a large bowl, stir together coconut flakes, condensed milk, and vanilla
- In a separate bowl, whisk the egg whites until soft peak.
- Fold the egg whites into the coconut mixture until just combined
- Using an ice cream scoop or hand make 2” balls
- Bake in the preheated oven for 15 minutes
- Remove and let it cool for 20 minutes.
- Melt chocolate in a double boiler (or microwave)
- Dip the cookie bottoms into the chocolate and drizzle more over the top
- Let sit until chocolate hardens
- Store in an air-tight container
