Chocolate Coconut Macaroons

Makes 20 cookies

Ingredients:

Directions:

  • Preheat oven at 350°F degrees
  • In a large bowl, stir together coconut flakes, condensed milk, and vanilla
  • In a separate bowl, whisk the egg whites until soft peak.
  • Fold the egg whites into the coconut mixture until just combined
  • Using an ice cream scoop or hand make 2” balls
  • Bake in the preheated oven for 15 minutes
  • Remove and let it cool for 20 minutes.
  • Melt chocolate in a double boiler (or microwave)
  • Dip the cookie bottoms into the chocolate and drizzle more over the top
  • Let sit until chocolate hardens
  • Store in an air-tight container
